These are cookies that we make every year. I have not met anyone that doesnt like these cookies. The trick is to make the cookies thick when you are rolling them out and the recipes says bake for 7 minutes but I normally only need to bake them for 4-5 minutes. I just let the bottom get a very very light brown that way they are so soft and not hard at all. Its trail and error to get them the way that you want.

X-Mas Roll Out Cookies with Frosting
1C butter
1egg
1tsp vanilla
1/2 tsp almond
1 1/2 C powered sugar
2 1/2 c flour
1 tsp baking soda
1 tsp cream of tartar
Combine flour, baking soda and cream of tartar
in Separate bowl Cream sugar and butter(do not melt just set out to get soft), mix in egg and flavoring
Blend the dry combined ingredients into the butter sugar mixture
Refrigerate 3 hours or overnight
Bake at 375 about 7 minutes

Frosting
1 c powered sugar
1/4 tsp salt
1/2 tsp vanilla
water as needed - start with 1 tablespoon
The frosting will harden as it sets. you want the frosting thin enough it can be spread on the cookies but thick enough that it wont run right off the cookies. I have never been able to make one patch of frosting frost the whole patch of cookies. You can put food coloring in the frosting to add some color and then add sprinkles on top. These are the cookies we make for Santa.

It was you that posted this recipe last year! I knew someone posted a recipe they raved about, but I didn't find it yet. Thanks SO much for posting it again! We will try it out for sure :)

Yep it was me. Let me know what you think of them!! They use to be a christmas cookie but now its a halloween cookie, christmas cookies, 4 of July cookies....whenever they get a craving for them. I make the dough at night before I go to bed and then make the cookies the next morning or early afternoon. When you first take the dough out of the fridge its hard you have to really work with it a while to get it soft enough to roll out and I use a knife and cut the dough into sections and work with enough I can fit in my hands.

OH yeah and you might want to sprinkle some flour on the table you are rolling them out..they will stick to the table and the rolling pin.

I thought I put it in the recipe box but I guess I didnt. I will try and remember to do that this time.

my grandma says substitute crisco for butter, it makes the cookies softer, but my brother in-law is a chef and cookies are his expertise. So, I will refer to him and let you know! God Bless

I just got done having a chat with Deb (diaperlady) and she told me her brother-in-law's secret to soft cookies!  She said use any sugar cookie recipe, then add a tablespoon or so of liquid sugar (kayro or molasses).  You may have to add up to 1/4 cup of flour to thicken the dough back up.  Then bake them a couple minutes less than the recipe calls for.  She said at first they may not seem super soft, but after 24 hours they will soften up and stay soft.  THANKS DEB!

Lynn mentioned syrup instead of brown sugar for no bakes, so this kayro or molasses may be the trick for this too!

No Bake Cookies

Here is a no fail No Bake recipe that everyone goes nuts for

Put in big bowl:
3 C quick oatmeal 3 T cocoa
Mix and set aside

In pan put:
2 C sugar 1 stick margarine 1/2 C milk
Melt the margarine first, add your sugar and milk. Bring to a boil and boil for 2 minutes. Add 1/2 C creamy peanut butter. Let the peanut butter melt and then add to oatmeal and cocoa and mix. Drop by teaspoon on foil and let set until dry.
