- 1 c Onion (chopped)
- 5 T butter
- 30 oz Frozen hash brown potatoes
- 2 cn Cream of celery soup
- 3 c milk
- 1 c Sour Cream
- 12 oz Sharp Cheddar Cheese
- 1⁄4 c Parmesean cheese
Instructions
Preheat oven to 350 degrees. Grease 9 x 13 baking dish. Pour frozen potatoes in dish, and sprinkle in about 3/4 of the cheddar cheese.
In large sauce pan, sautee butter and onions till onions are tender. Add milk and celery soup. Heat and stir often. Add sour cream and Velveeta. After cheese is melted, add salt and pepper to taste.
Pour sauce over potatoes in casserole dish. Move potatoes around so sauce coats potatoes evenly. Add remaining cheddar and parmesean cheese to top.
Bake 45 minutes - 1 hour, or until potatoes are tender. If top browns too quickly, cover with foil.
